Texas Red
4 lbs ground Chuck
1 lg yellow onion, chopped
1 t dried oregano
1 t cumin
3 T Ancho chili powder
1 t cayenne peper
2 C crushed tomatoes
2 ½ C water
1 t cornmeal
Salt to taste
Brown ground beef and onion in a Dutch oven over medium heat until lightly browned. Add remaining ingredients. Bring to slow boil. Reduce heat to low and simmer for 1 – 2 hours. Remove from heat. Refrigerate overnight. Skim off any grease that comes to the top. Reheat on low until warmed through.
